Dalé {Energy} Bars: What’s going on?

Dalé Spiced Nuts Recipe

Ingredients

  • 1 C Almonds

  • 1 C Pecans

  • 1 C Walnuts

  • 1 tbsp Coconut oil

  • 1 tsp Cinnamon

  • ½ tsp Ginger, ground

  • ½ tsp Orange zest

  • 1 tsp Coconut Sugar (brown sugar or
    white sugar is fine as well)

  • 1 tsp Salt

Directions

  1. Preheat the oven to 300 degrees.

  2. Chop almonds, pecans and walnuts and place in a bowl.

  3. Melt coconut oil and pour over nuts. Mix together with cinnamon, ginger, sugar & salt.

  4. Place on a parchment lined sheet pan and roast in the oven for 20 minutes. Halfway through, rotate the sheet pan. Nuts should be lightly browned & fragrant when done.

  5. After removing from the oven, sprinkle orange zest over nuts & stir to completely combine. Once cooled, they are ready to serve. The spiced nuts can also be made ahead of time and will stay fresh in an airtight container.

Wow, ok, I think I have created the best batch of Dalé bar bites this week.  And I do not say that lightly as I have had many Dalé bars over the years! 

Taste testing the Winterberry Dalé Bites really made my tastebuds & soul so happy! With a captivating aroma of buttery orange vanilla, the slow roasted nuts & seeds are almost magically infused with the honey cinnamon caramel that feel like a warm internal hug.  Perfect for this Christmas season! And the new Bing Cherries had a special nostalgic touch, especially if you are a maraschino cherry lover.

After over a year of pause. We are back.

In 2021, I sold over 72 dozen Dalé Bars last year, 81% of which were produced between January & February of 2021!  These are the highest numbers in Dalé Bar history & it really wouldn’t have been possible without my adventurous supporters! Thank you, thank you, thank you!  

However, I actually found it challenging to flow with any rhythm during the busy catering seasons even though I was motivated to expand. The reality of burnout {along with other barriers} made me pause and I reflected on the sustainability of this side hustle, its long-term growth, & what I truly want. 

I realized that in order to create genuine momentum with Dalé Bars, I need to create that energy within myself, & ultimately, embody the true meaning of the Dalé spirit. The word Dalé in Spanish means “just do it,encouraging us to seize the moment, enjoy the present & live our best lives. 

So, when the opportunity came to “slow down” in January of this year, I decided to invest in myself to work on a consistent & healthier routine {salud to my non-alcoholic journey, jogging 5ks, recovering from co-vid, & meal prepping consistently} in order to start being the best version of myself. AND by doing so, I can ultimately create the best Dalé experience for you all.

Prioritizing hustle & burnout  over rest & self-care is a “normal” mindset in this industry {& others as well} that no longer serves meit is time to break an unhealthy mold & start a new standard of success. ¡Dalé!

Of course, stopping production doesn’t make a lot of sense from a business standpoint.  I have felt guilty and a sense of lack for “not following through.” But, I need to honor & take care of myself, especially while working full-time in the Napa Valley.  Prioritizing hustle & burnout  over rest & self-care is a “normal” mindset in this industry {& others as well} that no longer serves me.  While setting boundaries can be scary, I know that I have to follow what really works for me & trust that it will all work out. And, perhaps, it is time to break an unhealthy mold & start a new standard of success. Dalé!

 
 

Dalé Bar Story

I created Dalé Bars with a daydream while working at Torrance Bakery & Sandwich Shop in 2013. I loved their decadent desserts & pastries we snacked on daily, but craved better fuel that still tasted good. In particular, I wanted to create a snack for busy individuals, like my co-workers and myself, who loved food. I researched different flavor combinations as well as ingredients that would give us sustaining, delicious energy. The aim has always been to provide a little spice in the everyday life, especially for those with adventurous tastebuds!

As a result, the Original Goji Berry Dalé Energy Bar was created! Already individually wrapped, the energy bars consist of a mixture of slowly roasted, hand chopped nuts, seeds, toasted oats and wheat bran, along with other flavoring components, all fused together by an exquisite, homemade honey cinnamon caramel.

Even though now Dalé Bar production has been stalled over the years, while balancing full-time positions & attending the CIA, they have always been in my heart. It amazes me that I can share this passion, even with my small tribe who has supported me throughout the years. And I am truly appreciative!

 
 

What’s going on now?

By taking a step back, I had the energy to create this website and other exciting offerings that I think will be very sustainable & exciting for the future of Dalé Bars!  It inspires me to keep creating & serving my adventurous followers!

The inspiration has led me to launch the 2022 Virtual Holiday Pop Up featuring small batches of Winterberry Dalé Bites!
